Homemade pies

I didn’t enjoy pies until I was in my 30s and I finally tried quality, homemade pies (thank you, Queenstown, New Zealand!). It got me thinking about all the interesting possibilities when it came to fillings – but first I had to master the pie base and process. This recipe is everything I’ve learned about making a foolproof pie base, with links to my favourite pie fillings.

Dill seafood sauce

This is THE best dipping sauce for fresh seafood like prawns and bug. The fresh, herbaceous and tangy flavours complement your seafood without overpowering it.

Pestotore (seafood pasta with pesto)

A spin on the classic pescatore pasta, pesto-tore is richer and bigger in flavour. Delicate seafood is cooked in a creamy white wine sauce finished off with lashings of pesto.

Oysters Carbonara

A fancy twist on oysters that’ll be sure to impress your guests! The creamy pasta tastes great paired with the saltiness of the oysters, and the topping of crispy jamon provides another textural contrast.

Mussels are a firm favourite in our house, and pairing them with pasta turns them into a satisfying meal. Add crusty bread to mop up all of that rich, creamy sauce infused with white wine, garlic and shallots.
