Smashed Avocado and Feta

There’s a joke in Australia that you can’t afford to eat smashed avo at a cafe AND buy a house – so save that cash and make it even better at home!

Ingredients
 1 avocado
 80 g feta
 2 tbsp lemon juice
 ½ tsp salt
 ½ tsp pepper
 4 slices sourdough bread
 freshly chopped chives, to serve

Variations

While smashed avocado and feta on toast is delicious on its own, it’s the perfect base for a couple of softly poached eggs!

Combine the ingredients

1. Halve the avocado and carefully remove the seed. Place the halves into a medium-sized bowl.

2. Chop the feta into small cubes and add it to the bowl with the avocado. (If your feta is the crumbly type, you can crumble it straight into the bowl with your fingers.)

3. Add the lemon juice, salt and pepper.

Smash it!

1. Use the back of a fork to smash up the avocado and feta, until you’ve reached your preferred consistency. 

Note: You don’t need to completely crush the feta, as few lumps of feta will taste great! You can even chop or crumble some additional feta over the top of the finished meal as a garnish.

2. Taste, and add additional lemon juice, salt or pepper if desired.

3. Serve over toasted sourdough bread (and potentially top with a couple of softly poached eggs!). Sprinkle with freshly chopped chives before serving.
